Sami Tamimi is The Steward by deliberate mission: preserving and transmitting Palestinian culinary culture before occupation and war erase it. He treats cookbooks not as commercial product but as living archive, documenting foraging traditions, farming memory, and generational knowledge he fears will otherwise vanish.
“I have this kind of almost like a dream. And lately I've been kind of thinking I should do something, I should open something, even if it's something small or simple. Because there's a market for it, first of all. And also there aren't a lot of good Palestinian restaurants here in London. Or around the world.”
“Yeah, I mean, this is why I chose them, and also because you need to navigate through so many recipes. And I was really lucky enough, my publisher. It makes it more interesting because I have this kind of almost like a fantasy list of ingredients that I want to kind of achieve, but you know that you can't include 300 recipes.”
“It means a lot to me because it's memories, it's connection to Palestine, to the family, to what I had as a kid and a kind of adult. It's the connection to land, to the environment, to the seasons, to I feel like people eat too much meat at the moment.”
“When you go back to a system, I respect it and I love eating it, but I am. A person who gets bored of things after a while. For me, adding things to different dishes Satisfy me, but also kind of finding a different link to how can I improve or how can I make it a slightly different.”
