  6. Think the thing that I absolutely love about running the restaurant, not eating it. I've been running the restaurant is the tangible reaction from people. And you also kind of know when you screwed it You also know when you got it right, so even it's kind of a weird way to say this, but even if a customer's unhappy. You know whether you got a right or wrong. It's not just about the food you're making, but it's about the person's psychological state. You'll do something that you're like, you know that was not done well. And their psychological state is just in a very happy place and they love it. And you're like, huh, interesting. That's not how I would have reacted to that dish. And then the other way around, you'd like, no, I got that right. And that person is just like really unhappy today.

  9. I got to tell the story. So just to talk to the craziness of being in the restaurant world where you're sitting at a table and anything can happen in the restaurant. So there's one time 15 years ago. This guy comes up to us and says we'd like to propose to his wife, his girlfriend. And so we said, okay, cool. We've done this before. We'll make sure it's all set up. 6 p.m. kind of reservation. So she shows up and we give her a glass of champagne. We didn't obviously didn't want to spoil a surprise. So we're just doing everything we can. But then he doesn't arrive. And they were like, oh, man. Now we're like, don't leave. Can we get you another glass of chemical? And we do everything we can because the guy was obviously earnest earlier just stuck in traffic or whatever.

  12. Yeah, it's actually, I think it's one of my most powerful life lessons is we have to eat. So it's not like you have a choice. You have to eat.   44. I think it was. So I grew up in apartheid South Africa, but more specifically the fall of apartheid. So it was the 80s. I was a teenager in the 80s. And our community would Of our social life, frankly, was the anti apartheid protests and to go be with white people, black people kind of mixing it all together. Most formative experiences, frankly, how much I appreciate a place like America where we have value for human life. That was a country where human life was not valued.
